Chocolate Fudge Cake

Ingredients
- 150ml sunflower oil, plus extra for the tin
- 175g self-raising flour
- 2 tbsp cocoa powder
- 1 tsp bicarbonate of soda
- 150g caster sugar
- 2 tbsp golden syrup
- 2 large eggs, lightly beaten
- 150ml semi-skimmed milk
For the icing
- 100g unsalted butter
- 225g icing sugar
- 40g cocoa powder
- 2½ tbsp milk (a little more if needed)
Instructions
- Step 1: Preheat the oven to 180C/160C fan/gas 4. Grease and line two 18cm sandwich tins. Sift the flour, cocoa powder and baking soda into a bowl. Stir in the caster sugar.
- Step 2: Use an electric whisk to combine the golden syrup, eggs, sunflower oil, and milk together in the centre of the bowl until the mixture is consistent.
- Step 3: Place the mixture into the two tins and bake for 25-30 minutes until there is a noticeable rise and it feels solid to the touch. Take out of the oven and let cool for 10 minutes before taking out and placing on a cooling rack.
- Step 4: In a bowl, cream the unsalted butter until light and fluffy. Sift in the icing sugar and cocoa powder and beat until fully incorporated. Add enough of the milk to make a spreadable mixture.
- Step 5: Join the two cakes together with a layer of butter icing then top and sides of the cake with an additional layer of icing.
