Ingredients

  • 150g salted butter, softened
  • 80g light brown muscovado sugar
  • 80g granulated sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 225g plain flour
  • ½ tsp bicarbonate of soda
  • ¼ tsp salt
  • 200g plain chocolate chips or chunks

Instructions

  • Step 1: Preheat the oven to 190C/fan170C/gas 5 and prepare two baking sheets with non-stick baking paper.
  • Step 2: Mix together 150g softened salted butter, 80g light brown muscovado sugar and 80g granulated sugar in a bowl until smooth and creamy.
  • Step 3: Incorporate the 2 tsp of vanilla extract and 1 large egg into the batter.
  • Step 4: Combine 225g of all-purpose flour, ½ teaspoon of baking soda, and ¼ teaspoon of salt in a bowl and mix them together using a wooden spoon.
  • Step 5: Incorporate 200g of plain chocolate chips or chunks and stir vigorously.
  • Step 6: Using a teaspoon, spoon out even amounts of the mixture onto the baking trays, making sure there is space between each scoop. This batch should yield around 30 cookies.
  • Step 7: Cook for 8-10 minutes or until the edges are lightly browned and press the center to check that it's still slightly soft.
  • Step 8: Allow to sit for a few minutes on the tray and then transfer to a cooling rack.
