Ingredients

  • 190ml rapeseed oil, plus extra for the tin
  • 250g plain flour
  • 80g cocoa powder
  • 3 tsp baking powder
  • 300g light brown soft sugar
  • 350ml whole milk
  • 2 tsp vanilla extract
  • 2 large eggs
  • 100g white chocolate chips

For the icing

  • 150g butter, cubed
  • 200g icing sugar, sieved
  • 4 tsp cocoa powder
  • 2 tbsp milk

Instructions

  • Step 1: Preheat the oven to 180C/160C fan/gas 4. Grease the base and sides of a 33 x 23 cm roasting tin that is at least 2.5 cm deep. Line with a sheet of baking parchment. Mix together the flour, cocoa powder, baking powder, sugar, and a pinch of salt in a large bowl. Break apart any sugar clumps with a whisk.
  • Step 2: In a jug, whisk together the oil, milk, vanilla, and eggs, then slowly add this mixture into the dry 'ingredients'. Gently fold the chocolate chips into the mix and stir with a spatula until the flour is completely incorporated. Pour the batter into the cake tin and bake for 25-30 minutes, or until a skewer inserted into the center comes out clean. If any wet mixture sticks to the skewer, bake for an additional 5 minutes before checking again. Let cool in the tin for at least 20 minutes.
  • Step 3: In the meantime, prepare the icing. Begin by melting the butter, then take the pan away from the heat and incorporate the icing sugar, cocoa powder and milk. The icing will be quite liquid, yet will thicken slightly when cooled. (If the icing has solidified before the cake is done cooling, melt it once again to make pouring easier).
  • Step 4: Spread the chocolate icing over the cake and let it firm up before cutting into squares.
