Ingredients

  • 100g butter
  • 125g caster sugar
  • 75g light brown or muscovado sugar
  • 125g plain chocolate (plain or milk)
  • 1 tbsp golden syrup
  • 2 eggs
  • 1 tsp vanilla extract/essence
  • 100g plain flour
  • ½ tsp baking powder
  • 2 tbsp cocoa powder

Instructions

  • Step 1: Preheat the oven to 180C/fan 160C/gas 4 and prepare a 20cm cake tin by greasing and lining it.
  • Step 2: In a pot, melt together the butter, caster sugar, brown sugar, chocolate and golden syrup on a low heat until completely liquified without lumps.
  • Step 3: Take the pan off the stove.
  • Step 4: Crack the eggs into the bowl, then use a fork to vigorously whisk the eggs until a fluffy and airy texture is achieved. Following that, combine the eggs, vanilla, flour, baking powder, and cocoa powder with the chocolately mixture and stir until the contents are fully blended.
  • Step 5: Grease and line a cake tin, pour the mixture into the tin and place in the center of the oven. Bake for 25-30 minutes.
  • Step 6: Take it out of the oven and let it cool for 20-30 minutes before slicing and serving.
  • Step 7: Garnish with cream or ice cream and an abundance of fresh fruit.
