Ingredients
- 1 large cooked beetroot, about 175g in weight, roughly chopped
- 200g plain flour
- 100g cocoa powder
- 1 tbsp baking powder
- 250g golden caster sugar
- 3 eggs
- 2 tsp vanilla extract
- 200ml sunflower oil
- 100g dark chocolate, (not too bitter), chopped into pieces
- crème fraîche or clotted cream, to serve
Instructions
- Step 1: Preheat oven to 190C/fan 170C/gas 5. Place beetroot into a food processor and blend until it has been chopped. Add in a pinch of salt as well as the remaining 'ingredients' (except for the oil and chocolate). Should all 'ingredients' be fully combined together, gradually pour in the oil as if you were making mayonnaise. Don't forget to scrape the sides of the food processor down a few times while mixing.
- Step 2: Once the oil has been incorporated, mix in the chocolate chips, then carefully pour the mixture into a lined 900g loaf tin. Bake in the oven for 1 hour, until a skewer inserted into the centre comes out almost clean. Remove from the tin and allow the loaf to cool down on a wire rack. Serve in slices with a dollop of crème fraîche or clotted cream.
