Ingredients

  • 150g butter, softened
  • 150g soft brown sugar, golden caster sugar, or ideally half of each
  • 1 egg
  • 1 tsp vanilla extract
  • 180-200g plain flour (see tip below)
  • ½ tsp baking powder
  • 200g chocolate chips or chopped chocolate

Instructions

  • Step 1: Using either an electric or a hand whisk, combine the butter and sugar until it is light and airy. Then, add the egg and vanilla and stir to incorporate. Incorporate the flour, baking powder, chocolate and ¼ teaspoon of salt swiftly, making sure not to overmix the dough as this will make the cookies hard and chewy.
  • Step 2: To maximize the flavor of the mixture, let it sit overnight either by covering the bowl and placing it into the refrigerator, or shape the mixture into balls and chill them.
  • Step 3: Preheat the oven to 180C/160C fan/gas 4 and line two baking trays with parchment paper. Break the mixture into balls, the less uniform they are, the craggier the cookies will appear. To give a more rustic look, pull apart the balls in half then squish them back together. Place the balls evenly on the baking trays, leaving enough space between each to account for spreading.
  • Step 4: Place the fresh cookies in the oven for 8-10 minutes and the pre-made ones for 10-12 minutes, or until they become golden brown around the edges but still soft in the middle. Once removed from the oven, let them cool on the baking sheet for a few minutes before serving warm or moving them to a wire rack to cool completely. These cookies can be stored in an airtight container for up to three days.
