Ingredients

For the cake

  • 200g butter, well softened, plus extra for greasing
  • 200g golden caster sugar
  • 100g ground almond
  • 100g self-raising flour
  • 1 tsp baking powder
  • ½ tsp almond extract or essence
  • 4 large eggs

For the filling and top

  • ½ a 340g jar morello cherry conserve
  • 175g icing sugar
  • 5-6 tsp water or lemon juice
  • 1 tbsp ready-toasted flaked almonds

Instructions

  • Step 1: Preheat oven to 180C/160C fan/gas 4 and place a rack in the center. Grease and line the bottoms of two 20 cm round cake pans with parchment paper.
  • Step 2: Combine all cake 'ingredients', including a pinch of salt, with electric beaters and mix until blended. Carefully pour the mixture into the tins and smooth the tops. Bake for 30 minutes or until golden and spongy. Do not open the oven door until 25 minutes has passed.
  • Step 3: After the sponges are finished baking, allow them to cool for a few minutes before gently removing them from the tins. Let the cakes cool completely on a wire rack, with one of the sponges positioned with its top side up - this will be your flat surface for the icing later.
  • Step 4: Place one sponge onto a serving plate and spread with jam before topping with the second sponge. Sift icing sugar into a bowl. Mix with water or lemon juice and stir until thick and creamy. Spread glaze over the top, letting it drip down the sides. Sprinkle with nuts then leave it to set for a few minutes before cutting.
