Ingredients
- 200g self-raising flour, plus a little more for dusting
- 50g butter, at room temperature
- 25g porridge oats
- 75g grated cheddar, plus extra for topping (optional)
- 150ml milk
To serve
- avocado, soft cheese, ham, cucumber, cress
Instructions
- Step 1: Preheat the oven to 220c (or 200c for a fan-assisted oven; Gas Mark 7). Place the flour in a large bowl, then add the butter and rub it in until combined. Mix in the oats and cheese, then gradually add the milk – if it feel too crumbly, add a little more liquid to bring it together and form a soft dough.
- Step 2: Sprinkle a light layer of flour across the work surface. Roll the dough out to a thickness no less than 2 cm. Utilize a 4 cm plain cookie cutter to cut out rounds of scone dough. Do not twist the cutter, as this can cause the scones to rise unevenly. Gather and roll out any leftover dough scraps and cut out additional scones.
- Step 3: Place the dough onto a non-stick baking sheet. Sprinkle a bit more flour or shredded cheese on top, then bake for 12-15 minutes until it is airy and golden-brown. Allow the bread to cool on a wire rack before serving either plain or topped with mashed avocado, cream cheese, ham, cucumber, or cress.
