Ingredients

  • 250g unsalted butter, cubed, plus extra for the tin
  • 3 large eggs
  • 275g light brown soft sugar
  • 25g dark brown muscovado sugar
  • 1 tsp vanilla bean paste
  • 1 tsp fine sea salt
  • 200g plain flour
  • 1 tsp baking powder
  • 100g dried pears, roughly chopped
  • 100g dark chocolate, roughly chopped
  • 3 tbsp caramel, from a can or jar

Instructions

  • Step 1: Preheat the oven to 180C/160C fan/gas 4. Grease and line a 20cm x 20cm square baking tin.
  • Step 2: Place the butter in a saucepan over medium heat and stir it around. Let it simmer for a few minutes, or until it turns a light golden color and has a biscuity aroma. Take it off the heat and let it cool slightly.
  • Step 3: Pour the eggs into a large bowl and mix together with the light and dark 'sugars' until blended. Incorporate the melted butter, vanilla extract and salt by whisking.
  • Step 4: Incorporate the flour, baking powder, dried pears and the majority of the chocolate chunks with soft strokes, being cautious not to over blend (which will make the blondies heavy).
  • Step 5: Distribute the mixture into the prepared baking dish. Scatter the rest of the chocolate and spoonfuls of caramel on top. Place in the oven and bake for 40 minutes or until a skewer inserted into the center is covered in sticky crumbs (it shouldn't be saturated). Allow to cool completely in the tin. It will sink slightly, the center should be a bit spongy. Cut into 12 pieces. Keep in a sealed container for up to three days.
