Cappuccino Cake

Ingredients
- 250g softened butter, plus extra for greasing
- 280g self-raising flour
- 250g golden caster sugar
- ½ tsp baking powder
- 4 eggs
- 150ml pot natural yogurt
- 1 tsp vanilla paste or extract
- 1 tbsp cocoa powder, plus extra to dust
- 100ml strong coffee (we made it with 2 tbsp coffee granules)
For the icing
- 140g icing sugar, sifted
- 350g mascarpone or soft cheese
- few chocolate-covered coffee beans
Instructions
- Step 1: Preheat your oven to 180C/160C fan/gas 4 and prepare a 20 x 30cm baking or roasting tin by greasing it and placing a sheet of baking parchment at the bottom. Take a bowl and with the help of an electric whisk, blend the butter, flour, sugar, baking powder, eggs, yogurt, vanilla, cocoa and half the coffee until the mixture is without lumps. Pour the mixture into the tin and bake for 25-30 minutes until it is golden and risen. To check if it is done, insert a skewer and check if it comes out clean. Decorate the top with the remaining coffee.
- Step 2: Let the tin cool down while stirring the mascarpone and icing sugar together. Spread the resulting mixture over the cooled cake, and top with a pinch of cocoa and coffee beans.
