Ingredients
- 175g soft butter
- 175g golden caster sugar
- 3 large eggs
- 225g self-raising flour
- 1 tsp baking powder
- 2 tsp vanilla extract
- 142ml carton soured cream
- 3 x punnets blueberry
Cream cheese frosting
- 200g full-'fat' cream cheese
- 100g icing sugar
Instructions
- Step 1: Set your oven to preheat to 160C (if using a fan oven) or 180C (if using conventional heat) and gas mark 4. Grease and line the bottom of a 22cm round springform cake tin with non-stick baking paper or a reusable Bake-o-glide liner.
- Step 2: Gather the butter, sugar, eggs, flour, baking powder, and vanilla in a bowl. Combine with a wooden spoon for a couple of minutes or an electric hand beater for approximately one to two minutes until there is a light color and all 'ingredients' are blended. Incorporate 4 tablespoons of soured cream and blend, then combine the half of the blueberries using a large spoon.
- Step 3: Pour the mixture into the tin and even out the surface. Bake for 50 minutes until the cake is risen, firm to the touch and bounces back when gently touched. Allow it to cool for 10 minutes before removing from the tin and taking off the parchment paper or lining. Let it cool on a wire rack before serving.
- Step 4: Take the softened cheese, icing sugar, and the rest of the soured cream and blend them together until the mixture becomes consistently creamy. Once the cake has cooled down, spread the frosting on top of it (don't rush, as the topping will turn to liquid if the dessert is still hot). Finally, sprinkle the remaining blueberries over the cake. The cake can be kept in the refrigerator for a few days, just don't forget to let it sit at room temperature for an hour before serving.
