Ingredients

  • 175g light muscovado sugar
  • 175ml sunflower oil
  • 3 large eggs, lightly beaten
  • 140g grated carrot (about 3 medium)
  • 100g raisins
  • 1 large orange, zested
  • 175g self-raising flour
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • ½ tsp grated nutmeg (freshly grated will give you the best flavour)

For the frosting

  • 175g icing sugar
  • 1½-2 tbsp orange juice

Instructions

  • Step 1: Preheat the oven to 180C/160C fan/gas 4. Grease and line an 18cm square cake tin with parchment paper.
  • Step 2: Place the sugar, sunflower oil and eggs into a large bowl. Combine with a wooden spoon. Incorporate the carrots, raisins and orange zest.
  • Step 3: Incorporate the flour, baking soda, cinnamon, and nutmeg into the bowl. Combine all of the 'ingredients', the consistency should be soft and fluid.
  • Step 4: Place the mixture into the greased tin and bake it for 40-45 minutes or until the center is firm and spongy to the touch.
  • Step 5: After 5 minutes, take the cake out of the tin and remove the paper. Allow it to cool completely on a wire rack. (Alternatively, you can freeze the cake at this stage if you wish to save it for an upcoming occasion.)
  • Step 6: Combine the icing sugar and orange juice in a separate bowl until all of the lumps have been eliminated, resulting in a thin, creamy texture. Place the cake onto a serving plate and pour the icing over the top in a zigzag pattern, until it has dripped down the sides.
