Ingredients

  • 300g self-raising flour
  • 1 tsp bicarbonate of soda
  • 100g light muscovado sugar
  • 50g porridge oats, plus 1 tbsp for topping
  • 2 medium bananas, the riper the better
  • 284ml carton buttermilk
  • 5 tbsp light olive oil
  • 2 egg whites
  • 150g punnet blueberries

Instructions

  • Step 1: Preheat the oven to 180C/fan 160C/gas 4 and prepare a 12-hole muffin tin with paper cases. Combine the flour, bicarbonate of soda, and all but 1 tablespoon of the sugar in a large bowl, adding 50g of oats. Make a depression in the middle. In a separate bowl, mash the bananas until they reach a creamy consistency. Stir the buttermilk, oil, and egg whites into the mashed banana until blended evenly.
  • Step 2: Carefully ladle the blended liquid mixture into the prepared baking dish and stir lightly and rapidly with a wooden spoon. The texture may appear lumpy, and a few specks of flour may be visible, but resist the urge to stir excessively. Add the blueberries and gently mix one more time. Distribute the batter among the muffin liners, filling them almost to the top. Sprinkle the remaining oats and sugar on top of each muffin. Place the tray in the oven and bake for 18 to 20 minutes until the muffins are fluffy and golden. Allow to cool in the tray for 5 minutes before transferring each muffin to a cooling rack.
