Ingredients
- 200g butter, softened, plus extra for the tin
- 2 large ripe bananas (250g peeled weight)
- 250g light brown soft sugar
- 4 large eggs
- 1½ tsp vanilla extract
- 250g self-raising flour
- 100g natural yogurt
- 100g dark chocolate, chopped into chunks
- 100g thick caramel or dulce de leche (we used a can of Carnation caramel)
- 12 dried banana chips, to serve (optional)
Instructions
- Step 1: Preheat oven to 180C/160C fan/gas 4. Grease and line a 20 x 30cm baking tin with two strips of crisscrossed parchment paper. In a pitcher, mash the bananas with a fork, then incorporate the butter and sugar and stir with an electric mixer until the mixture is uniform and fluffy.
- Step 2: Begin by incorporating the eggs to the mixture, one by one and beating the mixture until each egg has been well blended in. Add the vanilla and a pinch of salt afterwards. Use a spatula to combine the flour, yogurt and chocolate chips with the rest of the 'ingredients'. Evenly distribute the mixture in the tin and make sure to flatten the top. Place it in the oven and bake for 30 minutes or until it is golden brown and a skewer inserted into the centre of the cake comes out clean. Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack.
- Step 3: Divide the traybake into 12 pieces and top each one with a dollop of caramel and a banana chip, if desired. It can be stored in a tin for up to five days or, without the toppings, it can be frozen for up to a month.
