Ingredients
- 250g golden caster sugar
- 250g self-raising flour
- 140g pecan, roughly chopped
- 1 tbsp butter
- 2 eggs, plus 2 egg whites
- 3 large ripe bananas, or 4 small, mashed
- 150ml sunflower oil
- 100ml milk
- 1 tsp cinnamon
- 1 tsp baking powder
Instructions
- Step 1: Preheat your oven to 180C/fan 160C/gas 4, and then line the inside of a deep 20cm (8 inch) loose-bottomed cake tin with some baking parchment. For the crumble, mix together 2 tablespoons of sugar, flour and chopped pecans. After that, add in a few chunks of butter and use your fingertips to rub it all together until it resembles moist crumbs. Once done, set it aside.
- Step 2: Use a fork to scramble the eggs, then mix in the mashed banana, oil, and milk until the wet 'ingredients' are fully incorporated. In another bowl, add the remaining sugar, flour, and pecans, and stir in the cinnamon and baking powder. Whip the egg whites until they become stiff. Fold the banana mixture into the bowl of dry 'ingredients' until you obtain a consistent, lump-free mixture. Incorporate the egg whites with a metal spoon or spatula, and pour the resulting mix into the prepared pan. Add the crumble topping and bake for 1 hr, checking it with 15 minutes to go until a skewer inserted in the center comes out clean. If the cake is browning too quickly, cover it with another piece of parchment paper.
