Ingredients

  • 100g softened butter, plus a little extra for greasing
  • 140g caster sugar
  • 1 beaten egg
  • 225g plain flour
  • 2 tsp baking powder
  • 4 very ripe bananas
  • 85g chopped walnuts
  • 50ml milk

Instructions

  • Step 1: Preheat oven to 180C/160C fan/gas 4. Generously spread butter onto the inside of a two-pound loaf tin and line the base and sides with baking parchment, adding a layer of butter to this as well.
  • Step 2: In a large bowl blend the butter, sugar, and egg, preceding by gently stirring in the flour and baking powder. Peel the bananas and mash them. Now, combine all of the 'ingredients', including the nuts.
  • Step 3: Insert a skewer into the loaf and check to see if it comes out clean. Bake until done, and let it cool down on a wire rack before taking it out of the pan. You can keep the loaf in a sealed container for up to 2 days, or freeze it up to 1 month. When ready to serve, defrost or warm the loaf and cut into thick slices. Serve with a scoop of vanilla ice cream and drizzle with homemade chocolate sauce (recipe found below).
