Ingredients

  • 140g butter, softened, plus extra for the tin
  • 140g caster sugar
  • 2 large eggs, beaten
  • 140g self-raising flour
  • 1 tsp baking powder
  • 2 very ripe bananas, mashed
  • 50g icing sugar
  • handful dried banana chips, for decoration

Instructions

  • Step 1: Preheat oven to 180C/160C fan/gas 4.
  • Step 2: Grease a 2lb loaf tin and line the bottom and sides with parchment paper.
  • Step 3: Using an electric mixer, whip together 140g of softened butter and 140g of caster sugar until the combination reaches a light and airy consistency. Then gradually incorporate 2 large eggs, beaten, into the mixture alongside a small portion of the 140g of flour.
  • Step 4: Incorporate the left over flour, baking powder (1 tsp) and mashed bananas (2) into the mixture.
  • Step 5: Place the mixture in the ready tin and bake for about 50 minutes, accounting for regular skewer checks between 30-40 minutes; ensuring it is able to be inserted and removed with no residue. The baking time may differ depending on the form of the tin.
  • Step 6: Allow the tin to cool for 10 minutes before transferring to a wire rack.
  • Step 7: Combine 50g of icing sugar with 2 to 3 teaspoons of water to create a thin glaze.
  • Step 8: Top the cake off with a drizzle of icing and garnish with banana chips.
