Ah the famous Baci di Dama. Those little pieces of Italian heaven! Everyone loves them, and if you’ve never tried one before, you’re missing out on a truly special treat. Not only do they look absolutely adorable – they’re made of two hazelnut-flour cookies, sandwiched together with dreamy chocolate – but they also taste like a little slice of paradise.

Makes 16 biscuits

Ingredients

  • 100g blanched hazelnuts, toasted
  • 100g butter
  • 100g caster sugar
  • 100g flour (preferably ‘00’ flour)

For the filling

  • 100g dark chocolate, broken into small pieces

Instructions

  • Step 1: Pulse the hazelnuts until it becomes fine crumbs, making sure to not over pulse. Incorporate the butter and sugar and blend until it is a smooth consistency. Put the mixture in a bowl and sift the flour to it. Mix together with your hands and let chill in the refrigerator for one hour or until it has hardened enough to work with.
  • Step 2: Preheat the oven to 180C/160C fan/gas 4. Cut off teaspoon-sized portions of the mixture and roll into balls. Place them on the prepared baking sheet, about 2 cm apart. Bake for 15 minutes until they are golden-brown and then transfer to a wire rack to cool.
  • Step 3: In a bowl, heat the chocolate in the microwave in increments of 10 seconds, stirring until fully melted. Spoon a small amount of chocolate onto half of the cooled cookies. Allow them to set for 15 minutes before topping with the other half of the cookies. Leave the baci di dama to set (place them in the fridge if the kitchen is hot). Enjoy with coffee.
