Ingredients
- 125ml (½ cup) olive oil
- 140g (½ cup) maple syrup or agave syrup
- 2 eggs
- 130g (1/2 cup) apple sauce (shop-bought or homemade)
- 185g (2 cups) ground almonds
- 1 tsp baking powder
- 1 tsp cinnamon
For the topping
- 1 apple, skin-on, cored and diced
- tiny splash olive oil
- 1 tbsp maple syrup
- ½ tsp cinnamon
Instructions
- Step 1: Preheat the oven to 190C/170C fan/gas 5, and grease a 20cm springform tin and line the bottom with baking parchment.
- Step 2: Utilizing an electric stand mixer or hand blender, blend the oil and maple syrup for 30 seconds. Add in the eggs and mix for an additional minute prior to adding the applesauce and blending for another 30 seconds. Place in the ground almonds, baking powder, 1 tsp salt, and cinnamon, blend for 30 seconds and the batter is completed. Pour the mixture into the pan, and bake for approximately 30-40 minutes or until the top is a rich golden brown, the cake is detaching from the sides, and a skewer inserted into the centre comes out clean.
- Step 3: As the cake cooks, prepare the topping. Heat a small frying pan, and gently cook the apple together with the remaining topping 'ingredients' and a pinch of salt until the apple is soft and lightly caramelized. When the cake is done, place the caramelized apple chunks as a garnish on top of the cake. As an alternative, you could use chunks of caramelized peach or plum, cherry compote or any kind of berry cooked with a bit of water and maple syrup. Serve either warm as a dessert with a dollop of Greek yogurt or cold with a cup of tea or coffee.
